ADDITIONAL NOTES RELATING TO THE COMPLAINT:
(1) ALL VEGETABLES ARE WASHED USING POTABLE WATER--NO CHEMICALS ARE USED.
(2) ALL MEAT PRODUCTS ARE COOKED AT TEMPERATURES THAT EXCEED 165F.
(3) EQUIPMENT AND UTENSILS ARE WASHED USING THE 'WASH, RINSE, SANITIZE' METHOD.
(4) NO EMPLOYEES ARE ILL, OR HAVE BEEN ILL RECENTLY.

DUE TO THE DIFFERENT PATHOGENS AND COOKING TEMPERATURES ASSOCIATED WITH DIFFERENT SPECIES OF MEAT, SEPARATE RAW MEATS PRODUCTS from ready-to-eat food items. SO, TO PROTECT FOOD FROM POSSIBLE CROSS CONTAMINATION, STORE FOOD PRODUCTS IN THE FOLLOWING ORDER:(FROM THE BOTTOM TO TOP): (1) RAW POULTRY--CHICKEN AND TURKEY, (2) GROUND MEATS--BEEF AND PORK, (3) WHOLE MEATS--BEEF AND PORK, (4) RAW SEAFOOD, (5) FRUITS AND VEGGIES, AND (6) READY-TO-EAT FOODS AT THE VERY TOP [750.130]. Observed no label on any of the prepped food items within the natural cooler. Provide for all cooling potentially hazardous foods to be labeled with the date and time that the cooling process began [750.120]. Next Inspection
Observed no conspicuously placed thermometer within the natural cooler or in the reach-in cooler. Provide for an accurate, conspicuous thermometer, that is accurate within +/- 3°F, to be available in all units holding potentially hazardous foods [750.140]. Also, there is no metal stem thermometer onsite. Provide a metal stem thermometer to be provided and used to assure attainment and maintenance of proper internal cooking, holding or refrigeration temperatures of all potentially hazardous foods. Scale must show at least 0°F - 220°F [750.230] Next Inspection
17  Observed no test kit to be available for testing the chemical sanitizer. Provide for a test kit or other device that accurately measures the parts per million concentration of the sanitizer solution to be available [750.830]. Next Inspection
37  Observed the ceiling above the reach-in cooler to be unclean. In addition, the ceiling within the dry storage area is in poor repair.
